Soooo....with all that fresh produce we had an amazing dinner...
We toasted the bread in a pan with olive oil, sliced the heirloom tomatoes, drizzled them with olive oil and red wine vinegar, sprinkled with fresh goat cheese, cooked the green beans...and some smoked salmon we had from another shop.
It was so delicious !
I'm also attaching some photos from our scooter ride up Chuckanut Rd, and Pleasant Road. Over the rail road tracks and up a dirt road to a pretty view of some of the islands.
Have a great time for all of us who can't be there. Pacific Northwest is so beautiful.
